Winemaking: soft press of whole bunches and static decanting of must; inoculum of selected yeasts, fermentation and refinement in stainless steel tanks.
Fermentation temperature: 60 ‘F
Bottling period: second week of February, following harvest.
Color: Straw yellow with some greenish reflection.
Aroma: stiff and gentle, with aromas of mint, sage and white peach; white chocolate and citrus follow. Mineral notes are distinctive.
Palate: in mouth, the wine is full and elegant, with nice acidity. Salty back taste with fulfilling notes of flowers and mint
